Homemade Spicy Black Bean Soup

Oh the weather outside is frightful…. stupid polar vortex and such. In this kind of weather all I want is a hot and spicy soup so I decided to work on one. This still a work in progress but I’m happy with the results thus far. I used my slow cooker because its cold and I’m feeling lazy. Also because my wife was making meat sauce(I’ll put that recipe up another day but one thing at a time people)


The ingredients are
2 cans of Black Beans (Drained and rinsed)
2 cans of Diced Tomatoes with Green Chiles
1 can of just Diced Tomatoes
1 can of Whole Kernel Corn (Drained not rinsed)
1/2 sweet onion (small diced)
1 Chorizo link – If you can find one with Jalepeno already in it then good, otherwise add a Jalepeno (Also you can omit this if you want a vegetarian option)
1 can of Chicken broth (Also can change to vegetable broth if you want a vegetarian option)
2 cloves of garlic
Salt and Pepper to taste

After you have all your ingredients prepped just add them to your slow cooker and cook it on high for about 4 hours

Enjoy a bowl or two and stay warm this winter.
